Ingredients

2 pounds of white beans (fabes)

1 pound of pork shoulder

2 chorizo sausages

2 morcilla sausages (blood sausages)

1 ham bone or smoked ham hock

1 onion, chopped

Preparing the Beans

Sort and inspect the white beans, removing any debris or damaged beans.

Rinse the beans under cold water.

Place the beans in a large bowl and cover with water. Allow them to soak overnight.

Preparing the Meats

In a large pot, add enough water to cover the pork shoulder and ham bone. Bring it to a boil.

Add the pork shoulder and ham bone to the boiling water. Cook for 10 minutes, then remove and discard the water.

Rinse the pork shoulder and ham bone under cold water to remove any impurities.

In the same pot, add fresh water and the rinsed pork shoulder and ham bone. Bring it to a boil again.

Skim off any foam or impurities that rise to the surface.

Reduce the heat to low and let it simmer for about 1 hour or until the meats are tender.

Cooking the Fabada Asturiana

In a separate pan, heat some olive oil over medium heat.

Add the chopped onion and minced garlic. Sauté until they become translucent and fragrant.

Drain the soaked beans and add them to the pot with the onion and garlic.

Add enough water to cover the beans by about an inch.

Add the bay leaf, chorizo sausages, and morcilla sausages to the pot.

Bring the pot to a boil, then reduce the heat to low and let it simmer for about 1.5 to 2 hours, or until the beans are soft and creamy.

Occasionally skim off any foam or impurities that rise to the surface.

Once the beans are cooked, remove the bay leaf and ham bone from the pot.

Take out the chorizo and morcilla sausages, slice them, and set aside.

Shred the pork shoulder into smaller pieces and add it back to the pot.

Season the fabada asturiana with salt and sweet paprika, adjusting to taste.

Let the flavors meld together over low heat for another 10-15 minutes.

Serving and Presentation

Ladle the fabada asturiana into serving bowls.

Garnish with fresh parsley, if desired.

Serve hot and accompanied by crusty bread.
