Ingredients Needed

Spaghetti

Pancetta or bacon

Garlic

Egg yolks

Parmesan cheese

Salt and black pepper

Preparation

Fill a large pot with water and bring it to a boil.

Add salt to the boiling water.

Cook the spaghetti according to the package instructions until al dente.

While the pasta is cooking, heat olive oil in a skillet over medium heat.

Add the pancetta or bacon to the skillet and cook until crispy.

Add minced garlic to the skillet and sauté for a minute until fragrant.

Remove the skillet from heat and set it aside.

Sauce Preparation

In a bowl, whisk the egg yolks until well combined.

Grate the Parmesan cheese and add it to the egg yolks.

Season the egg mixture with salt and black pepper according to taste.

Mix the egg, cheese, salt, and pepper together until smooth and creamy.

Combining the Pasta and Sauce

Drain the cooked spaghetti, reserving a little pasta water.

Immediately add the hot pasta to the skillet with pancetta/bacon and garlic.

Toss the pasta in the skillet until it is coated with the oil and pancetta/bacon.

Remove the skillet from heat to prevent the eggs from scrambling.

Slowly pour the egg and cheese mixture over the pasta while continuously tossing it to evenly coat.

If the pasta seems dry, add a splash of reserved pasta water to create a creamy consistency.

Continue tossing the pasta until the sauce thickens and coats the noodles.

Serving

Divide the carbonara pasta into individual serving plates or bowls.

Grate additional Parmesan cheese on top if desired.

Garnish with fresh parsley.

Serve immediately while hot.
